Our syrup is single origin, which means it’s produced from sap gathered in our geographic area of upstate N.Y.  Controlling the origin of the sap and syrup allows us to preserve the uniquely delicious taste of maple syrup made in the pristine forests of the Catskill Mountains. We maintain control over every step of the production process to ensure that every drop is top quality and traceable back to the very trees from which it was produced.
